In Veneto, the custom of mixing water with wine is ancient: some place it at the time of the early production of wine among the Paleo-Venetian peoples, some in the Greco-Roman era, some in the late Middle Ages, to refresh the farmers fatigued by work in the fields under the scorching sun or to revitalize the workers from the arsenals, and some, finally, in the 19th-century Austrian occupation of Venice, when this water and wine took the name of Spritz, becoming in the last hundred years the greatest success of the Italian aperitif. This book investigates the historical roots and illustrates the social uses of Spritz, which has now risen to the status of a universal drink of sociability, fueling a true “spritzmania.”
